Rancho Gordo Marcella bean is a small, white heirloom cannellini bean grown in California with origins from Italy. Known for its very thin skin that yields an incredibly creamy texture when fully cooked in slow heat.

The Story Behind Marcella Beans:

The founder of Rancho Gordo, Steve Sando received an order one day from a customer named Marcella Hazan from Florida. It was the same woman who had published the Classic Italian Cooking cookbook that was lying around in Steve’s kitchen.

Steve and Marcella soon connected online, where they shared their love for food and 60’s Italian pop music. Marcella mentioned to Steve that the beans missed the most from Italy were the Sorana cannellini beans, encouraging Steve to go on a search for these.

However, Marcella soon passed away before Steve was able to harvest them and send her samples. The first bag of the beans instead went to her husband, Victor, and were named the “Marcella” beans in memory of this wonderful woman.
