As the base for their fish tagine simmering sauce Mina uses the delicious chermoula, Morocco’s all-purpose marinade, made with aromatic herbs (cilantro, parsley) and spices (paprika, cumin, turmeric). Lemon and ginger are added for brightness and complexity, cayenne provides a bit of heat, and tomato intensifies the richness of the sauce.
