Ortiz anchovies are expertly caught during the Cantabric coastal fishing season using traditional methods. After being classified by size and having their heads removed, they are then cured in salt and pressed before maturing in barrels. The length of storage time plays a crucial role in determining the intensity of flavor and texture of the anchovies. These specific anchovies have been aged for at least six months before being hand-filleted and packed in high-quality olive oil. For serving, avoid cooking them and instead enjoy them with Piquillo peppers and a drizzle of olive oil, or atop a bed of endives. These anchovies are also a key ingredient in preparing a classic Caesar sauce.
